Impact of aflatoxin B1 from poultry on human hepatic carcinoma.

Mycotoxins are secondary metabolites produced by toxic fungi affecting animals and humans, of which ~400 occur in food processing. FAO estimates that ~25% of the world's grains are contaminated by mycotoxins. In birds, aflatoxin, Ochratoxin, T-2 toxin, diacetoxyscirpenol (DAS), Fumoninisina, Citrinin y Cyclopiazonic acid may induce teratogenic, mutagenic, and carcinogenic processes, and/or depression of the immune system. Ingestion of poultry meat and viscera containing mycotoxin is a common source of human poisoning and accumulation of toxin in muscle and viscera of broiler chickens could trigger carcinogenic processes. Aflatoxin B1 (AFB1) is a potent dietary hepatocarcinogen in humans. Mutations and altered expression of tumor suppresser gene p53 has been observed in liver tumors from patients exposed to high dietary AFB1.
