Incidence of Clostridium perfringens enterotoxin in retail food and human feces.

Ghoneim NH, Hamza DA., Incidence of Clostridium perfringens enterotoxin in retail food and humans feces, Onl J Vet Res., 20(9):625-632, 2016. Total anaerobic count and toxin genotype for C perfringens isolates in 155 non-outbreak food samples from retail outlets were tested by multiplex PCR as reservoir for poisoning in humans. Clostridium perfringens enterotoxin in stool samples from 150 persons in contact with same food samples were determined by ELISA. Approximately 2.6% of the tested meat and retail meat samples were contaminated with C. perfringens. Laboratory criteria for C perfringens in food does not include detection of chromosomally located enterotoxin gene with low count of C. perfringens. C perfringens enterotoxin (CPE) is responsible for diarrhea and cramping symptoms.
