We monitored chemical microbiology in rainbow trout treated
with or without 0.2 % w/w nisin over 16 days at 4 °C. In treated samples we found 6.21
meqkg-1 peroxide, 0.71 mgkg-1 thiobarbituric
acid and 24.81mg100g-1 volatile
basic nitrogen whereas in untreated samples excessive (P < 0.05) values. Nisin inhibited
(p<0.05) psychrotrophic, mesophilic and lactic
acid bacteria (LAB) compared with controls (5.35
log, 1.57 log, and 6.3 log vs. 6.82 log, 5.35 log and 7.84
log, respectively).
